| The black locust is a beautiful tree that blooms in mid-May and produces the first real surplus honey crop in northern NJ. The honey is considered one of the finest varietals in the state. It is water-white, highly delicate, floral and waxy. An unreliable crop, we get only a few hundred pounds of locust every second or third year, and when it's gone, it's gone....a truly special honey. |
