| A rich dark amber, Japanese Bamboo honey comes from a local invasive shrub that is more common in the mid-Atlantic than most people would wish! The silver lining to this particular dark cloud is that bamboo (also known as knotweed) produces a delicious dark honey, free of the strong mineral flavor of many dark honeys such as buckwheat. Bamboo honey is very dark amber and delicious glazing a ham or on roast winter squash or sweet potatoes. A fall honey, bamboo may not be available at all times. |
